Gajar ka halwa without sugar in pressure cooker - it is made of grated carrots, powdered jaggery, milk, water and dry fruits. Making in pressure cooker saves time to cook the carrots.



Instead of sugar, we are using powdered jaggery which is much healthier than refined sugar. It tastes good and there are many benefits of jaggery.

In winter season, I remember my mom always made gajar ka halwa in traditional way using a wok. We all used to love it after a meal and in our childhood we were not that fond of dry fruits. And dry fruits are loaded with benefits so our mother used to add dry fruits in gajar ka halwa which tastes so nice.

If you are working person either woman or man, or you are a mother you would have less time to prepare for halwa. So I am sharing you a quick recipe of gajar ka halwa in pressure cooker which saves so much of time. And enjoy it with your family after a meal and your family will be happy.

The traditional way of making gajar ka halwa takes so much of time around 2-3 hours or more (depending on the quantity). In pressure cooker it takes 20-30 minutes, really a big time saver.

Gajar ka halwa is a popular Indian dessert which I think everyone loves it. Today I am sharing a quick recipe of gajar ka halwa without sugar in pressure cooker.

In our traditional method gajar ka halwa is cooked in a wok with grated gajar and milk.  Simmered to cook in milk for hours which makes halwa rich. Hence milk is evaporated and milk solids are left.

How to make gajar ka halwa in pressure cooker

We are making gajar ka halwa of 2 kgs

Ingredients required
- 2kg Grated Gajar 
- 1 cup ghee
- 1-2 cups powdered jaggery
- 1.5 cup water
- 3 cups milk
- 1 cup Dy fruits almond, kishmish and cashew

For garnishing
- half cup cashew

Method

1. Clean and grate carrots.

2. We will take big pressure cooker as the quantity of gajar is 2 kgs. We will heat pressure cooker for a while. Add ghee and let it heat.

3. Add grated carrots and cook for 4-5 minutes. Add 1.5 cups water to pressure cooker carrots till 2 whistles on medium flame.

4. After pressure cooking carrots we will add milk 2-3 cups and powdered jaggery and mix it well. Add dry fruits and mix it well.

5. Cook gajar ka halwa till milk evaporates.

6. Gajar ka halwa is ready. Garnish with cashews and Serve Hot.
