Medu vada Medu vada is mostly popular over South India and it is a South Indian fritter made from Vigna mungo. It is usually made in a doughnut shape, with a crispy from outside and soft from inside. A popular food item in South Indian and Sri Lankan Tamil cuisines, it is generally eaten as a breakfast or a snack. Today we are adding our flavor to medu vada, we will make sandwich of medu vada by cutting it from center and add masala flavors. Following is the recipe- Ingredients - 4 medu vadas - already cooked - 3 tbsp butter for greasing and cooking - 4 tbsp finely chopped onions - 1 tsp garlic (lehsun) paste - 1/2 tsp ginger (adrak) paste - 4 tbsp finely chopped tomatoes - 4 tbsp finely chopped capsicum - 1/2 tsp chilli powder - this is optional - 1/2 tsp garam masala - 1/2 tsp pav bhaji masala - 4 tbsp coriander leaves (dhania leaves) - salt to taste Method 1. Bread pakoda Ingredients 4 slices bread oil for deep-frying For The Aloo Masala 1 cup boiled , peeled and mashed potatoes 2 tsp oil 1/2 tsp mustard seeds ( rai / sarson) 5 to 6 curry leaves (kadi patta) 1/4 cup boiled and coarsely mashed green peas 1/4 tsp turmeric powder (haldi) 1 tsp ginger-green chilli paste 1 tbsp finely chopped coriander (dhania) salt to taste To Be Mixed Into A Smooth Batter (using 1/2 Cup Water) 1 cup besan (bengal gram flour) 1/4 tsp turmeric powder (haldi) 1/2 tsp chilli powder a pinch of asafoetida (hing) salt to taste For Serving meetha chutney teekha chutney sukha lehsun ka chutney Method For the aloo masala 1. A yummy upma made with Puffed rice makes for an interesting snack or breakfast recipe KURMURE KA UPMA Ingredients 10 cups puffed rice (kurmura) 2 tbsps oil 1 tsp mustard seeds ¼ cup roasted peanuts 1 medium onion, finely chopped 10-12 curry leaves 1 medium green capsicum, finely chopped  2-3 green chillies Salt to taste 1 lemon juice Method 1. Place a strainer over a bowl, put the puffed rice into the strainer and pour over it so they become moist. 2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add peanuts and onion and sauté till the onion turns translucent. Add curry leaves  and mix well. Add capsicum and mix well. 3. Finely chop green chillies and add.  Add puffed rice and mix well. I am sharing recipe to make potato in harissa sauce. It looks awesome and tastes more awesome. It is an easy snacks and can be used as a party Starter. To make this snacks we need following ingredients Ingredients 2 cups boiled baby potato - cut into half pieces oil for deep-frying 1 tbsp oil 1/2 tsp roughly chopped garlic (lehsun) 1/2 cup chopped spring onions whites and greens 2 tbsp harissa sauce 1 1/2 tbsp tomato ketchup a pinch of salt 1 tsp lemon juice  For The Garnish 1 tbsp finely chopped spring onion greens Method Heat the oil for deep-frying in a deep non-stick pan; deep-fry the potatoes till they turn golden brown in colour from all the sides. Drain on an absorbent paper. Maharashtrian Amboli 😍 Amboli is an authentic Malavani dish. It can be had in  breakfast or can be served as evening snacks too. It is an easy recipe.. healthy snacks too. Kids will love the snacks. To add your own flavors you can take Chutneys of your choice. Ingredients 1 1/2 cups rice flour (chawal ka atta) salt to taste oil for greasing and cooking Method Combine all the ingredients along with 3 cups of water in a deep bowl and mix well to get a batter of pouring consistency. Heat a broad non-stick pan and lightly grease it with oil. Pour 1/3 cup of the batter from a height in a circular motion. Cover with a lid and cook on a medium flame for 1 to 2 minutes. Remove the lid. Put little oil and turn the side and cook on a medium flame for 2 minutes.  Repeat steps 2 to 4 to make 9 more ambolis. Serve hot.
