Medu Vada Tawa Sandwich

Medu vada
Medu vada is mostly popular over South India and it is a South Indian fritter made from Vigna mungo. It is usually made in a doughnut shape, with a crispy from outside and soft from inside. A popular food item in South Indian and Sri Lankan Tamil cuisines, it is generally eaten as a breakfast or a snack.

Today we are adding our flavor to medu vada, we will make sandwich of medu vada by cutting it from center and add masala flavors.

Following is the recipe-

Ingredients
- 4 medu vadas - already cooked
- 3 tbsp butter for greasing and cooking
- 4 tbsp finely chopped onions
- 1 tsp garlic (lehsun) paste
- 1/2 tsp ginger (adrak) paste
- 4 tbsp finely chopped tomatoes
- 4 tbsp finely chopped capsicum
- 1/2 tsp chilli powder - this is optional
- 1/2 tsp garam masala
- 1/2 tsp pav bhaji masala
- 4 tbsp coriander leaves (dhania leaves)
- salt to taste

Method

1. We will cut each medu vada horizontally (from center of the vada) using a sharp knife, to get 2 piece of each medu vada. And we will keep it aside.

2. Heat 1½ tbsp. Of butter on a tava (griddle), add the 2 tbsp of onions and sauté on a medium flame for 1 minute.

3. Add ½ tsp of garlic paste, ¼ tsp of ginger paste and sauté on a medium flame for few seconds.

4. Add 2 tbsp tomatoes, 2 tbsp capsicum, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.

5. Add ¼ tsp of chilli powder (optional), ¼ tsp of garam masala, ¼ tsp of pav bhaji masala, 2 tbsp coriander leaves and little salt, mix well and cook on a medium flame for few seconds, while stirring continuously. We will stir it continuously so that the ingredients does not burn.

6. Place 4 medu vada halves, facing the cut portion downwards over the masala, press lightly and cook on a medium flame for 1 minute. Turn over and cook on a medium flame for 30 seconds.

7. Place 1 piece of the vada over the other half, to form a sandwich.

8. Repeat above steps 2 to 7 to make 2 more vada sandwiches.

9. Serve hot with ketchup, mayonnaise, chutneys.
