Cooked rice idlis
What is an idli?
Idli or idly are a type of savoury rice cake which is made by rice soaked in water, originated from the Indian subcontinent, popular as breakfast foods in southern India and northern Sri Lanka. The cakes are made by steaming a batter consisting of fermented black lentils and rice. Idli is often enjoyed in breakfast or as a snacks with sambhar, coconut Chutney. People love to add their flavors so they like to have different Chutneys with idli like coriander chutney, tomato chutney.. etc etc.
Today, I am sharing a recipe of idli which is made by cooked rice. You can use leftover rice to make idlis.
Cooked rice idlis
Ingredients
1 cup cooked rice (chawal)
1/2 cup urad dal (split black lentils)
1/2 tsp fenugreek (methi) seeds
1 cup rice semolina (idli rawa)
salt to taste
For Serving
sambhar
coconut chutney
tomato chutney
Method
1. Combine the urad dal, fenugreek seeds and water in a deep bowl and mix well.
2. Cover with a lid and keep aside to soak for 2 hours. Wash and drain it well.
3. Add the cooked rice and blend in a mixer to a smooth mixture using approx. 1½ cups of water.
4. Transfer the mixture into a deep bowl, add the rice semolina and salt and mix ingredients very well. Cover it with a lid and keep aside to ferment in a warm place for 10 to 12 hours.
5. After fermentation, mix the batter well once again and pour spoonfuls of batter into each of the greased idli moulds.
6. Steam in an idli steamer for 10 minutes or till they are cooked.
7. Repeat above steps with the remaining batter to make more idlis.
8. Allow the idlis to cool slightly and demould them.
9. Serve hot idlis with sambhar, coconut chutney and tomato chutney.
